So a couple weeks ago I made Simply Recipes Easy Pumpkin Ice Cream, but because I didn't add any Brandy I think it got too hard ( I may have also over processed it in the ice cream machine, since I do have the habit of turning it on and walking away). My friend Liz recommended making a pie out of the ice cream by pouring it (or spackling in this case) into a crust. So I did that and went a step further and melted some chocolate pieces for the top. It came out quite well, but for the top which was way too thick and hard. Sorta like Pumpkin Pie Ice Cream but not mashed up. ha!
