BANANA CARAMEL CAKE


While we are waiting for our Fall DOTM recipes, I thought I would share this Banana Caramel Cake.
This recipe for is from Martha Stewart's Baking Handbook, it's the baking book I go to most often. I have made it once before without the Marscapone frosting, I used Buttercream instead and it's a good thing cos' I had forgot to add sugar! It was still so good, I swear it. So last night I made this for Marty's 35th. He was raised on banana pudding, and banana is his absolute FAVE. I am including a scan of the recipe from the book but my scanner is a small home model so, it's not very clear. For the Marscapone Frosting:
one lb Marscapone Cheese
1 1/4 cup heavy whipping cream
1/4 cup powdered sugar ( I used less)
Whip all ingredients until soft peaks form.
The one thing that went awry, was I think I over whipped. My frosting came out without the glossy shine, I was expecting. I drizzled the top with my stash of homemade caramel sauce from my earlier caramel experiments. This cake is a show stopper.

  2. This cake was so good. I had the pleasure of licking the bowls. That sounds gross, sure, but it was soooo good.
