Since our lovely Nicole is off in Richmond getting ready for her big day, she asked me to post my recipe card from last month. I made Persian rice cookies with lots of cardamom. It's a really light, fragrant cookie and is especially good with coffee or tea or (soy/rice/moo ) milk. The rice flour gives it a grainy texture, not unlike a shortbread cookie, only much less dense. It's a very easy recipe and I hope you'll give it a try.
